Tabular Data in WP

Hey. I need to make a theme to manage a site with info like: http://shawnee.edu/acad/fine/game.html. As you can see, a lot of the information are class tables. What would be the best way to manage this with WP for average users?

• Table plugin? Something like: http://wordpress.org/extend/plugins/mce-table-buttons/
• Shortcodes?
• Custom post types for courses listed and short codes to list courses by categories? Know of something good to buy/download for that?
• Meta boxes that can be repeated? Again, know of anything?
• Something else?

Lots of pros on here. I would very much appreciate some advice. I am very willing to buy a theme or plugin with the solution… Cheers.
