I have 5 stars based on 3 ratings. Is my rating based on a particular item of mine that was rated 5 stars or is it on the overall profile. The reason I ask is because I have checked my items and none have a rating. So how did I get the rating as seen on my profile page??

Your overall rating is an average of all your ratings on all your items.
It takes a minimum of 3 ratings to give you your average (for either your profile or an item).
Although none of your items may show an ‘average’ rating yet, some of them may still have 1 or 2 ratings, etc, to give you the 3 ratings you now see 
Not an official answer, but I assume it’s an average based on all your items.
An individual item requires minimum of 3 votes before a rating appears. I assume a profile is similar and overall you have more than the votes required to show on your profile but individually none of your items has 3 or more ratings yet.
